Sushi

Ingredients:

  • 1 medium avocado
  • 1 carrot
  • Pieces of crab (imitation or real), or a can of tuna, or smoked salmon (tuna should be mixed with 15 mL of mayonnaise and salt)
  • Dried Seaweed
  • 500 mL Cooked Sushi Rice (375mL dry rice to 560 mL water)
  • Wasabi and Soy Sauce to serve

Method:

  1. Peel avocado, cucumber and carrot and cut into thin strips
  2. Lay seaweed on bamboo mat and place sticky rice onto seaweed until fully covered and close to the same thickness and flatten with a spoon.
  3. Place vegetables and meat onto rice about 1/3 of the way and roll up carefully
  4. Begin rolling by lifting the mat closest to you and slowly rolling, pressing down as you work.

Sweet & Sour Chicken

Sweet-and-Sour-Chicken

Ingredients:

  • 200g of Chicken
  • 30 mL vegetable oil
  • ½ green pepper, cubed
  • 125 ml Carrots, sliced
  • ½ onion, sliced
  • 125 mL pineapple tidbits1 garlic clove
  • 15 ml cornstarch
  • 15 ml water
  • 125 ml water (for sauce)
  • 2 mL molasses

 

Method:

  1. Cut chicken into 2 cm cubes
  2. Wash and seed pepper and cut into 3 cm square chunks
  3. Slice carrots thinly on the diagonal
  4. Microwave carrots & peppers for one minute
  5. Mince garlic & cut onion
  6. Mix cornstarch and 15 ml water and set aside beside pan
  7. Mix vinegar, soy sauce, sugar, and minced garlic to make a sweet and sour solution
  8. Fry chicken in frying pan with oil until golden brown or solid white. Remove & drain on paper towel
  9. Use medium high heat, heat sauce pan and add sweet and sour mixture. When it begins to boil, add cornstarch to the solution until gravy thickens
  10. Add vegetables and pineapple and stir.
  11. Add chicken to molasses and stir quickly and then add to the sauce.

Potato Gnocchi

Ingredients:

  • 1 Potato peeled, cooked, mashed
  • 125ml flour
  • 5ml margarine
  • 1 egg beaten
  • Pinch salt & pepper

Instructions:

  1. Bring a large pot of water to a boil
  2. Wash, peel, and quarter the potato, cook in boiling salt water until tender. Drain thoroughly and mash firmly with a masher.
  3. Place potato in bowl and add the flour, margarine he egg and salt and pepper.
  4. Knead on lightly floured surface until the mixture is smooth.
  5. With floured hands, shape pieces of the mixture (~5ml) into small balls and press a thumbprint in the center of each ball.
  6. Drop the balls into a sauce pan of boiling water, cook until the gnocchi floats to the top (3-5mins)
  7. Lift out of the pan with a slotted spoon and transfer to a warm dish.
  8. Top with 10ml margarine and stir to coat
  9. Serve with tomato sauce and enjoy!

Fresh Pasta with Tomato Sauce

Fresh Pasta Sheets:

Ingredients:

  • 375 mL flour
  • 2 Eggs
  • 5 ml salt
  • 30 ml water
  • Special Equipment- A pasta machine

 

Method:
Dough

  1. Mound flour, make a well in center
  2. Add eggs, salt, and 30 mL water to well
  3.  With a fork, gently beat eggs and water until combined
  4.  Gradually add flour to form a paste
  5.  Knead remaining flour into mixture
  6.  Add remaining water drop by dough is too dry
  7.  Knead dough until smooth and elastic, 3-5 minutes

Roll Pasta

  1. Divide dough into 4 pieces, flatten each piece into a rectangle and cover with an inverted bowl.
  2. Set rollers of pasta to widest setting
  3. Lightly dust 1 rectangle with flour and feed through rollers
  4. Fold rectangle in thirds and feed it through 7 or 8 more times, folding it in thirds each time
  5. Turn dial to next setting (narrower) and feed through roller without folding
  6. Continue to roll once at each setting until you reach the number three setting
  7. Cut dough in half cross-wise
  8. Lay sheets of dough to dry (15 minutes)
  9. Attach cutting adapter
  10. Insert pasta sheets through linguine setting
  11. Boil pasta for 3-5 minutes in boiling water

 

Tomato Sauce

Ingredients:

  • 10 ml oil
  • 1/3 onion
  • 2 cloves garlic, minced
  • 2 ml each dried oregano and basil
  • 250 ml diced tomato
  • 2 ml Sugar
  • Salt and Pepper to taste

 

Method:

  1. Sauté onion, garlic, oregano, basil, and oil until onions are translucent.
  2. Add diced tomatoes and sugar
  3. Simmer uncovered for about 10 minutes or until desired thickness
  4. Add salt & pepper to taste

Pizza

Ingredients:

  • 8mL Instant active yeast
  • 125ml warm water
  • 250 ml flour
  • Tomato Sauce
  • Any toppings
  • 15 ml Olive Oil
  • 3 mL Salt
  • 5 mL White Sugar
  • 250 ml Cheese

Directions:

  1. In a small bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  2. In a large bowl, combine flour, olive oil, salt and the yeast mixture; stir well to combine. Turn onto a lightly floured counter and knead until a stiff dough has formed cover and let rise for 20 minutes. Meanwhile, preheat oven to 350 degrees.
  3. Turn dough out onto a well floured surface. Form dough in a round shape and roll out pizza crust. Cover with your favourite sauce and toppings and bake in preheated oven until golden brown. About 20 minutes.

Ingredients
Crust
250 mL flour
3 mL salt
80 mL margarine

30-40 mL cold water

Filling
2 sliced of bacon

50 mL grates cheddar

50 mL Swiss cheese
3 eggs
75 mL milk or half and half
2 mL salt
1 mL paprika
Directions
1. Preheat oven to 375 F

2. Cook bacon until desired doneness

3. Sift flour and salt together
4. Cut in shortening with a pastry blender until it resembles small crumbs

5. Sprinkle cold water over dough and mix in with a fork

6. Form dough into a ball wrap in plastic place in freezer for 5 minutes
7. Grate the cheese
8. Beat eggs with 75 mL milk

9. Chop up bacon

10. Lightly flour counter and roll out dough
11. Put dough in pan
12. Prick the bottom of pie crust with forks
13. Put bacon on the bottom and sprinkle cheese over bacon
14. Pour wet mixture over cheese and bacon
15.Put in oven for 20-25 minutes
